Tentacular!

Before Liang, Lena, and I left Taichung for Taipei, their Dad took us to lunch at more non-traditional restaurant. Where he proceeded to order these for an appetizer:

Despite their appearance, no tentacular creatures were harmed in the making of this foodstuff. The top layer is kimchi, beneath that (and difficult to see) is mayonnaise, then transparent noodles, then seaweed. Flavor-wise, they tasted entirely like kimchi. Texture-wise, they were all crunchy.

Liang gives one a try.

The unexpected texture is unexpected!

I like the looks of the fake crabs. But from the look on Liang's face, it must not taste as good as it looks.

it's actually not clear noodles...i forget what dad called them but apparently they're made from a sea plant similar to seaweed. it's a popular replacement for noodles in korea in the summer b/c they're refreshing and no carb. ...i sound like an advertisement...

Ahhh... I must have only caught the "noodles" part of your Dad's "replacement for noodles" explanation :)
